Make sure to use pure maple syrup, not pancake syrup. I made this today and it was good, but I didn’t find the dressing super close to Portillos. It was just a bit too tart and not sweet enough. If are whoop calories accurate I were to tweak it I would use a white wine vinegar, I am pretty sure Portfolios doesn’t use balsamic because their dressing is cream colored. I also might use more sugar. The salad was good though.
This recipe is perfect! Made it for a family holiday potluck party. Proportions are spot on, and the Portillo lovin’ family absolutely loved it. 100 of my favorite recipes! Cook Ditalini pasta according to package instructions.
Even my pickiest eaters don’t notice the cooked broccoli if I chop it fairly small when it’s mixed in with all the other amazing ingredients in this salad. So needless to say, it’s good to make sure I have plenty of dressing. I love my greens, don’t get me wrong. And although there are exceptions, I typically enjoy my salads with more of the toppings and less of the greens. Or an equal match, as is the case with this copycat Portillo’s Chopped Salad. There’s plenty of romaine lettuce and sliced radicchio in this chopped salad and it’s the perfect amount to balance out all that bacon, cheese and pasta.

Then you’ll add the 3-4 ingredients that make this salad a true stand out – ditalini pasta, cubed chicken , crumbled bacon, and crumbled Gorgonzola cheese. Hi, I live in Chicago and I eat at Portillo’s all of the time. Fyi…their chopped salad has chopped purple onions and there is no red cabbage in their salad.
